Apple, Cranberry, and Pineapple Crisp

Ingredients

Topping

  • 1 cup (packed) golden brown sugar
  • 3/4 cup all purpose flour
  • 10 tablespoons (1 1/4 sticks) unsalted butter, diced, room temperature

Filling

  • 1/4 cup all purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1 1/4 pounds Golden Delicious apples (about 3 medium), peeled, quartered, cored, cut into 1/4-inch-thick slices
  • 2 cups 1/2-inch cubes peeled cored fresh pineapple

Recipe Preparation

For Topping

  • Whisk sugar and flour in medium bowl. Add butter; cut in with back of fork until mixture is crumbly. Add oats and pecans; blend until clumps form. DO AHEAD Can be made 1 day ahead. Cover and chill.

For Filling

  • Whisk first 4 ingredients in large bowl. Add apples, cranberries, and pineapple. Stir until fruit is evenly coated. Let stand until juices form, tossing occasionally, at least 30 minutes. DO AHEAD Can be made 3 hours ahead.

  • Preheat oven to 375°F. Spread filling in 11x7-inch glass baking dish. Sprinkle topping evenly over. Bake until filling is bubbling thickly and topping is brown and crisp, about 45 minutes. Let cool at least 15 minutes. Spoon into shallow bowls. Serve warm or at room temperature with ice cream.

6 medium apples, peeled
1 cup dried cranberries
1 teaspoon ground cinnamon
1 tablespoon lemon juice
¾ cup old fashioned oatmeal
¾ cup all purpose flour
½ cup brown sugar, packed
1/3 cup light butter
½ cup black walnuts, chopped

Preparation

  1. Heat oven to 375 degrees F.

  • Measure: I like to pull out the Reynolds Wrap ® as long as the pan and add a bit more to make sure the sides are covered as well.
  • Cut: Simply hold down the Reynolds Wrap® box while pulling the non-stick wrap away from the box. Using the perforated box gently pulls it away leaving a nice straight line.
  • Press Sides: Gently press in the sides and around the casserole dish or glass dish until the non-stick foil is flat and covering the pan.

  • cut the apples in 1 inch slices. This prevents mushy fruit as it cooks.
  • You can swap out and use Gluten-free flour and the flavors are the same.
  • Make ahead and cover with foil and serve the next day.
  • You can use frozen cranberries in lieu of fresh with same results

Step 1

1. In a large bowl, combine the cranberries, apples, sugar, cinnamon, and 1 tablespoon of flour. Transfer the mixture into a greased 6 cup shallow baking dish.

2. In the same bowl (no need to wash it), combine the remaining flour, brown sugar, oats, and nuts. Stir in the melted butter or margarine and mix the ingredients well (the mixture should be crumbly). Sprinkle the oat mixture over the fruit mixture.

3. Bake the crisp in a preheated 375 degree oven for 40 minutes or until the crisp is lightly browned. Let the crisp stand for 10 minutes before serving.

Cinnamon Cranberry Apple Crisp

One of my closest friends is vegan and a hard core sweets addict. This combination makes the holidays especially difficult. Between Thanksgiving and the December holidays, there is a constant barrage of treats.

Unfortunately for her, almost every time she inquires about ingredients, she is faced with a laundry list of butter, eggs, milk, chocolate, and other non-vegan friendly products. It's torture. So this year, we set out to do things a little differently so she wouldn't have to nearly cry in the corner dreaming of a vegan friendly dessert.

We decided to make our favorite holiday goodies and swap up traditional ingredients for plant-based alternatives and see if anyone even noticed. Spoiler alert. No one had a clue. This isn't surprising either. According to this recent Sneaky Chefs study conduced by Earth Balance, nearly half of people don't notice when the "real thing" is replicated with a plant based alternative. And whether they notice or not, 74% of people enjoyed it either way.

Being someone who loves butter, I wanted to try swapping in Earth Balance in a recipe where I feel like the butter makes a big difference - Apple Crisp. To my surprise, the Earth Balance buttery spread, was a perfect replacement. You still got the caramel notes you want from the butter and brown sugar. It added just enough richness and the crust still got nice and golden brown. Seriously, not one person suspected that we had made a swap. It was delicious.
