Buying nut butters at the grocery store can be, well, pretty nutty. For an eight-ounce jar, you can shell out as much as $20 depending on the type. Make your own at home from peanuts, almonds, walnuts — or whatever nuts you like. First, toast the nuts until fragrant. Then toss them in the blender with some salt and a little sugar. Process until smooth.

Don’t feel like dirtying bowls, spatulas, and spoons for Saturday morning pancakes? Add all your ingredients to the blender container and mix for a few seconds. 2. Non-Dairy Ice Cream

Good news all you frugal foodies – you do not need an ice cream maker to make your own non-dairy ice cream! There are truly so many ways you can do it right at home in your blender. Here are some awesome options:

  • Freeze peeled, ripe bananas into cubes and blend those up to make dairy-free sorbet/ice cream (a top favorite among plant-based foodies). Because everyone knows bananas are the secret ingredient to easy vegan ice cream!
  • Freeze almond milk into ice cubes and once frozen, blend in a blender with a touch more almond milk and any flavorings you want (this does work best in a Vitamix or Blendtec).
  • Pour your favorite smoothie into ice cube trays, let them freeze, and blend the cubes with just a tad bit of almond milk or coconut milk until you have an ice cream-like consistency (which also works best in a high-speed blender).
  • Make your smoothies super-thick and extra frosty by reducing the liquid. This turns them to an ice-cream like texture instead of a drinkable smoothie, so you can devour them with a spoon instead of slurping them down like a protein shake. Check out my tips for how to make an incredibly thick and frosty smoothie if you’ve never tried this before, but don’t say I didn’t warn you – this one trick alone will truly change you life!
  • Blend a little almond milk with some fresh coconut meat and ice cubes to make a coconut-flavored ice cream or try a mix of coconut and cashews to make The Best Vegan Ice Cream in the World!
  • Blend frozen pieces of avocado, banana, and your favorite fruit to make instant ice cream just like you would banana sorbet.
  • Blend pumpkin puree with almond milk, pour into ice cube trays and let them freeze. Blend in a high speed blender with some vanilla, cinnamon, almond milk, and stevia to make your own vegan pumpkin latte ice cream or you can use pumpkin puree to make this yummy Pumpkin Ice Cream and Brownie Parfait!
  • Blend some leftover, strongly-brewed coffee with almond, coconut, or soy milk and freeze into ice cube trays. Blend in the blender with a little bit of the same non-dairy milk to get it going and add some vanilla, stevia (or coconut sugar), cinnamon, and a touch of cocoa powder to make your own mocha flavored ice cream!

3. GREEN GINGER SMOOTHIE

Green smoothies have been regarded as “life-changing” if added to your diet. Results of a documentary called Powered by Green Smoothies showed that ultrarunners and CrossFit athletes who stuck to their training regime and added green smoothies to their daily diet experienced quicker recovery and significantly less soreness.

Rich in iron, spinach is a key ingredient of the green smoothie. Its antioxidants and high levels of vitamins B and C aid exercise performance. Vitamin C specifically prevents the destruction of the red blood cell membrane during exercise, research has found.

Depending on your taste, add either broccoli, cauliflower, Brussels sprouts and kale, all of which have high concentrations of antioxidants, fibre and vitamins.

Cashew nuts combine protein and healthy fats naturally. They are rich in heart-healthy monounsaturated fats and their high antioxidant content may be key to their cardio-protective benefits, research suggests.

Pineapple will sweeten this smoothie and provide it with important vitamins and minerals. Enzymes found in pineapple can fight inflammation and disease and ease digestion. Bromelain, found in the fruit, may reduce the time it takes to recover from exercise.

To increase the protein volume of this healthy smoothie, add hemp seeds into the blender. Besides offering protein, these are packed with omega-3s, omega-6s fatty acids and magnesium.

Top with coconut water, fresh lemon juice and fresh ginger.

Healthy Breakfast Recipes You Can Make From Leftovers

We’ve all been there. The dreaded… “Oh my gosh we are running late and haven’t eaten breakfast!” Yep. Those crazy morning when even making a healthy smoothie seems like too much effort. Those crazy mornings can really throw you for a loop if you are not prepared. Been there. Done that. Don’t want to go back.

So here’s my thinking. Let’s call it the “MAKE AHEAD BREAKFAST MEAL PLAN” strategy. A strategy where we are prepared, efficient, healthy, and RESOURCEFUL.

First, examine your leftovers from dinner. Is there a healthy starch. Like brown rice, quinoa, fruit, or potato? Use them wisely! You can take any of these lovely starches and blend them with eggs and milk. That batter is great for waffles, muffins, rice pudding, or pancakes. Breakfast items you can freeze or place in the fridge overnight, and that are easily made portable (minus the syrup of course).

Since you are already in the kitchen cleaning up dinner (or delegating someone else too), you can take that batter and pour into a waffle maker for 10 minutes, bake in muffin pans, or even bake up pancakes (yes bake!). Once cooked, just place in fridge or freezer.

I should also note that adding a little chocolate or peanut butter makes them EXTRA special for the kiddos. Okay and adults too. We’re all big kids really, right?

Here’s my GO TO recipe for Chocolate Banana Rice Waffles. This easy make ahead breakfast recipe was made from leftover jasmine rice and extra ripe bananas. Throw in a scoop of chocolate peanut butter or cocoa powder and you’r set! Great to freeze or eat right away. And most importantly, it’s PORTABLE.

INGREDIENTS

    • 2 eggs
    • 2 cups cooked rice, millet, or quinoa
    • 1 medium banana
    • 1 tbsp oil
    • 1/4 to 1/3 cup brown sugar
    • 1/2 tsp baking powder
    • dash of salt
    • 1 tsp vanilla
    • 1 tbsp tapioca flour or potato flour
    • 1/2 cup milk of choice (almond milk, 2 %, or coconut milk work too)
    • 2 -4 tsp of Chocolate Cocoa powder

    Instructions

    1. Place all the ingredients in a blender besides the milk. Pulse blend until mixed, then turn on low and add your milk last.
    2. Blend until smooth and thick.
    3. Keep batter in blender.
    4. Grease a waffle iron. Make sure it’s pre heated.
    5. Pour mix onto hot waffle iron. Cook until golden brown. Around 7-10 minutes per waffle. Remove and serve hot or let cool then wrap in foil and place in freezer for later.

    Oh and did I mention healthy? Yes! Even better. Balanced in carbs, protein, and fat! Great breakfast fuel for a busy family and active kids.

    When your dried sea moss arrives, it will have a smell. The golden sea moss smells mineral/grassy. The darker purple and pink sea moss smell like puppy breathe to me LOL. I’ve noticed some batches are smellier than others. Thankfully most of the smell goes away after soaking.

    Before I had sea moss gel, I read that it tasted like nothing. It’s true that the taste is VERY mild, which helps it blend in so seamlessly with food, but there is a very, very faint sea-like taste. It’s not a “fishy sea,” but kinda like minerals and ocean air.

One issue some of the personal trainers I consulted shared about the Vitamix is its price tag — certainly an investment, which one personal trainer noted might be worth it for some: “I have fallen into the trap of getting a cheap blender… But that's not the way to go because I have had some that smoke and get too hot blending,” said personal trainer Lexi Grace. “I, too, have purchased a $15 blender from Target which started smoking while I was making a smoothie after I only had it for two months,” said Grace, adding, “I use it for smoothies, blending sauces, and making protein ice cream that all help me stay on track with my fitness goals.” The blender isn’t loud and has “no problem” chopping up solid pieces of food for smoothies or shakes, and Grace notes it’s super easy to clean.     Store-bought granola bars can be loaded with added sugars, and the healthy ones can be pretty pricy if you want to make them a regular part of your diet. Make your own at home by mixing granola or oats with peanut butter or melted coconut oil, honey, vanilla, crushed pretzels, and other fun add-ins like pumpkin seeds or mini-chocolate chips.

    There are tons of dips out there that call for you to add cream cheese and other flavorings. I used to avoid making any of those because they turned out so lumpy. But with the help of a KitchenAid, your mixes will be smooth and delicious.
