The night before we make the cake, we do flux:
Put the candies in a bowl over which we will put the 2 tablespoons of water and melt them in a bain marie, stirring constantly. After they have melted, we start to add the powdered sugar, mixing with a spoon, from the moment when it can no longer be mixed with a spoon, we start to knead by hand. It should come out like a soft, fluffy dough. After we have fermented it well, we wrap it in a foil and put it in the fridge until the 2nd day. It can be stored in the refrigerator for a month.
For Princess Sofia we need a drawing printed in 3 copies. We cut each part of the body with scissors. We stop a copy to have the whole model.
Before working with the fondant, it must be taken out at room temperature for a few hours. I colored a piece with purple dye to make the dress, I painted the rest. To make the dress, we spread the purple fondant and cut it with a small knife, on the edge of the model.
We do the same with the other shapes in the drawing or we can cut everything into one piece and with the brush we paint each part of the drawing depending on the model.
I don't know if I explained it properly and I didn't even have time to pose for the procedure. I was inspired by this and maybe it will be useful for you too.
We are preparing the countertop
Separate the egg whites from the yolks, beat them with a pinch of salt until they double in volume, then add the sugar in the rain, the yolks one by one, the oil, the milk, the essence, the flour mixed with the baking powder, then mix the composition well with a spatula. Put the resulting composition in a tray lined with baking paper (stove tray) and put it in the preheated oven for about 30 minutes on medium heat.
In the meantime we prepare cream:
We break the chocolate into small pieces and put it in a bowl, over which we pour the liquid cream. Put the pot on the fire and bring to the boil (be careful, it should not boil!) Homogenize the composition and let it cool. After it has cooled well, mix it until it doubles in volume and begins to lighten in color. Cut the cake top into 3.
We syrup it with sweetened milk or some syrup and we start the assembly, syrupy countertop - cream - syrupy countertop - cream - countertop - cream.
On top we put the whipped cream that we mix well (we stop the whipped cream to make some moate - optional).
I put Princess Sofia over the whipped cream and garnished it with a few more popcorn.
