It is a festive dish with lamb legs, vegetables and figs, seasoned with spices and white wine, easy to prepare and which combines wonderfully the taste of lamb with sweet pears, the discreet aroma of garlic with vegetables and the flavor given by rosemary and thyme. A lovely combination!

PREPARATION TIME: 2 hours 30 min

INGREDIENT:

1.5-2 kg Lamb legs (chops can also be used)

2 basil threads for decoration

Peel the lamb pulp. Wash the carrot, celery and onion and cut into large pieces. Break the rosemary and thyme in your hand, cut the garlic heads in half. Then massage the meat well with a mixture of olive oil, crushed black pepper and salt. In the oven tray, put the white wine, vegetables (carrot, 2 onions, celery), garlic, rosemary, thyme and bay leaf, place the pulp over them and put in the oven at 180 degrees Celsius for 1 hour and a half . Remove, cover everything with foil and leave in the oven for another 45 minutes, until the lamb is browned.

The syrup is then prepared. Put 1 liter of water, 500 g of sugar, anise and allspice in a saucepan. Peel a squash, grate it and add it. Leave on low heat for 25 minutes, until a pink sauce is obtained. Add the pears cut in half, without seeds, and leave, over low heat, until well softened. Then the pan is set aside.

Clean the gulia, leeks and onions. Cut the gulia in half, leave the whole leek (or, if it is large, cut it in 2) and the whole onions. Heat the water with salt, boil the gulia, after 10 minutes add the onion, and after another 15 minutes, the leek. Boil until soft, remove and cut the onion in half. In a pan with 2 tablespoons of olive oil, put the gulia with the face flat down, to make the crust, add the onion and season with salt. Put in the pan the dried figs, natural, to brown a little.

Remove the lamb from the oven. Strain the vegetables through a sieve. Place the lamb on a plate, place the halves of the goulash and onion, leeks, figs on top and decorate with pears in the sauce. The remaining rose sauce from the pears can be served separately.

We will put it in the oven heated to half approx. 120 degrees, for 20-25 minutes, after which we will rest it for another 10 minutes before serving.

For goulash we will clean, wash and cut the vegetables, we will harden them in oil, but without the prepared potatoes. After sautéing the vegetables for 5 minutes, over medium heat, add the Édes Anna Univer paprika, 24% Univer tomato paste and Univer sweet or hot goulash cream. At the end we will add red wine, thyme and water or bone broth. After the goulash will boil for 10 minutes, add the potatoes, let it boil, over medium heat for 15-20 minutes.
