Eggplant salad with baked peppers

a light and very tasty salad.

  • 3 eggplants
  • 4 red capsicums
  • 1 dried onion (medium size)
  • 1 teaspoon mustard
  • salt and pepper to taste
  • 1/2 teaspoon dried basil
  • about 100 ml of sunflower oil

Preparation time: less than 60 minutes

RECIPE PREPARATION Eggplant salad with baked peppers:

We wash the vegetables. Bake eggplant and peppers. We let them drain and cool.

After they have cooled, we pass them through the robot, we obtain a fine, frothy paste.

Peel an onion and grate it. Drain the water from it, add it over the eggplant and peppers, season and incorporate with the mixer all the oil and mustard.

Leave the flavors to blend in the fridge for a while and serve.
